Mushroom Timbales with Parmesan Sauce
Tagine of Lamb, Chickpeas and Potatoes

Cooking time:  70 minutes for menu, with breaks       Cooking schedule: see below for instructions

     For the timbales, add the mushrooms slowly to reduce risk of 'cooking' the eggs.  You can use a tagine (if you happen to have one) for the lamb but a large skillet works just as well. 'Tagine' is both the name of a cooking vessel and the method of cooking - even if it's in a skillet. Substitute pork if you prefer.

Total time: 45 minutes  
   The Timbales highlight the flavors of the mushrooms.  Use wild, forest or Cremini if possible, for the most interesting tastes.

Tagine of Lamb, Chickpeas and Potatoes

Total time: 1 hour 10 minutes
   Lamb with a Moroccan influence: a bit spicy, but not hot (my preference).  Add hot sauce or harissa if you like the heat. 

Tagine of Lamb, Chickpeas and Potatoes Ingredients:

 Instructions:

Cooking Schedule: 70 minutes for menu
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
small saucepan, lid, medium skillet, 2 ramekins,
baking pan, large skillet with lid (or tagine),
parchment or wax paper, bowl, whisk

Cut, trim lamb, brown
Slice onion
Turn lamb
Mince garlic
Remove lamb
Sauté onion, garlic, cumin, paprika, ginger
Return lamb, add stock, reduce heat, cover, simmer
     15 minute break
Turn the oven on 400F (200C)
Trim, chop mushrooms
Sauté mushrooms, paprika
Prepare ramekins, paper

Whisk eggs, add thyme, yogurt, whisk
Add 1/4 mushrooms to egg, stir
Add remaining mushrooms to egg, stir
Spoon into ramekins, put in pan with hot water, bake
Cut potatoes
Crush saffron, if using, add to lamb
Add potatoes to lamb, cover, cook
    15 minute break
Grate Parmesan
Heat milk for sauce
Add yogurt, Parmesan, mustard, stir, take off heat
Cut olives in half, add to lamb
Drain, rinse chickpeas; add to lamb
Remove timbales
Add parsley to lamb, cover, simmer
Plate Timbales
Spoon sauce around, serve
Done? Spoon lamb, vegetables on platter, serve
