Barbecued Pork Loin
Italian Picnic Pasta Salad
Alubias con Tocino (Beans with Bacon)

          There will be enough leftover for a picnic - and the dinner could be cooked ahead and served cold for an easy day.

Total time: 60 minutes
     The Grill Expert came up with the idea of having a very thin basting sauce to keep the pork moist... It worked. The pork is enough for 2 meals.

Italian Picnic Pasta Salad

Total time: 35 minutes
         This is the 'classic' or original (close to it, anyway) Pasta Salad.  The original called for bottled "Italian Dressing" but I prefer to make my own.  It's a great salad to take to a pot-luck picnic or to plan on leftovers.  For two I would simply cut everything in half.

Alubias con Tocino (Beans with Bacon)

Total time: 25 minutes
     American Pork and Beans with a Spanish twist. Beans (alubias) of all types are a staple in Spain.  This serves 4 or is enough for 2 meals for 2.  

Alubias con Tocino (Beans with Bacon) Ingredients:

 Instructions:

To peel tomatoes: Bring a medium pan 3/4's full of water to a boil on high heat.  Drop tomatoes in for 30 seconds - start timing immediately.  Remove tomatoes and drop into a bowl of cold water. Remove and peel with a knife or your fingers - peel will come off very easily.

Cooking Schedule: 70 minutes for menu
Assemble all ingredients and utensils
Utensils: measuring cups, spoons, knives,
scissors, whisk, 2 small bowls, medium bowl, large
bowl, pot, colander for pasta, medium saucepan,
medium skillet, BBQ grill, film, foil

Turn on / light barbecue grill
Put water on high heat for pasta
Snip herbs
Make vinaigrette, put into large bowl
Slice onions; add to vinaigrette
Slice mushrooms; add to vinaigrette
Slice olives; add to vinaigrette
Cut salami; add to vinaigrette
Toss vegetables well with vinaigrette to coat
Cover vegetable bowl with film, set aside
Make rub for pork, rub, cook pork
Make basting sauce for pork, baste
Cook pasta
Chop / slice pepper, tomatoes, celery for salad
Baste pork
Drain pasta
Rinse pasta cooking pot with cold water (to cool)

Return pasta to cooled pot, add olive oil, toss to coat
Add peppers, tomatoes, celery to pasta, stir, cover
Baste pork
Make barbecue sauce
   Pause while everything cooks, marinates
Heat water for tomatoes
Sauté bacon
Fill medium bowl with cold water
Blanch tomatoes
Remove tomatoes, put in cold water
Peel tomatoes, chop
Turn bacon
Chop onion, mince garlic
Remove bacon, fat
Add oil, onions, garlic, paprika, sauté
Baste pork
Add beans, tomatoes, paste, stock, bay, simmer
    Pause while stuff cooks
Baste pork with barbecue sauce
When pork is done, remove, let rest
Combine pasta with marinated vegetables
Finish beans, slice pork
Serve - or set aside and serve later.....
