Meat Loaf Florentine
Scalloped Potatoes

Cooking time:  80 minutes for menu      Cooking schedule: see below for instructions

I'm not sure which we like better: meat loaf or the, inevitable and much-loved, meat loaf sandwiches.  Don't be put off by the slightly green color  - it tastes right!  ;-)) Both potatoes and meat loaf will be for two meals.

Meat Loaf Florentine

Total time: 80 minutes
While this meat loaf is chock-a-block with vegetables it still retains the 'proper' meat loaf taste and texture.  We'll eat it for 2 meals - and there may be enough for a couple of great sandwiches as well. I actually used about 19oz (540gr) in this because I had some bits in the freezer to use up.

Scalloped Potatoes

Total time: 1 hour 10 minutes
Scalloped Potatoes have long been a favorite at our house.  They're easy and easily expanded to serve more.  This serves 4 or will be for 2 meals.

Scalloped Potatoes Ingredients:

Note:  Whenever I am baking potatoes with a liquid: gratin, scalloped, Savoyard, etc. I always put the baking dish/dishes on a baking sheet covered in foil.  They almost always bubble over and this saves on oven clean up.  Just wrap up the mess and toss.
