        Another slow-cooked dinner on Saturday - but don't worry, we won't be doing this every week. And something that can spend the afternoon cooking, unattended, can be great this time of year. Save some of the 'neck' end of the squash to make slices on Monday. The Enchiladas give us one of our rare forays into prepared foods....
