Hamburgers and sweet corn. It's still summer! You could have the burgers on buns and skip the potatoes.....
Simple Grilled Burgers
Total time: 30 minutes
I used beef but these would be equally good with ground turkey or chicken. If using poultry I would use white wine. The crumbs, wine, etc. add a bit of moistness and a whole lot of flavor!
Ingredients:
- 12oz (360gr) ground beef ( mince)
- 2 tbs breadcrumbs
- 1 tbs red wine or stock
- 1 1/2 tbs ketchup
- 2 tsp Dijon-style mustard
- 1/2 tsp garlic powder
Instructions:
- Put all ingredients into a large bowl and mix well.
- Shape into 3 or 4 patties.
- Cook on barbecue grill over direct heat for 4 - 5 minutes per side.
- Or sauté in nonstick skillet for same amount of time.
- Remove and serve.
Grilled Potatoes with White Balsamic Glaze
Total time: 35 minutes
A reduction of white Balsamic vinegar, sweetened with a bit of sugar, give these the hint of potato salad, but keeps the crispness from roasting.
Ingredients:
- 2 medium potatoes
- 1 tbs olive oil
- 1 tsp paprika
- 1/2 cup white Balsamic vinegar
- 1 tbs sugar
- 1 tbs freshly snipped basil substitute 1 tsp dried
Instructions:
- Slice potatoes in half the long way, then in half again. Then slice in half or thirds the short way.
- Put oil and paprika in a large bowl, add potatoes and toss, coating thoroughly.
- Put them into an old metal pie plate or cake tin or foil barbecue container (or whatever) that you will never use for any purpose but the barbecue again... and you should have one of these.
- Cook on barbecue (grill) for 20 - 30 minutes or until done... and you will need to stir them with a long-handled wooden spoon occasionally as they tend to develop 'hot spots' and can get a little crispy.
- Or you can roast them in the oven. Arrange potatoes on baking sheet with rim (I use my trusty, round pizza pan) Bake at 400F for 30 minutes.
- While the potatoes cook, heat vinegar and sugar in a small saucepan.
- Boil until reduced by half. Keep warm.
- When potatoes are done put them into a serving dish, pour vinegar over, sprinkle with basil and serve.
Sweet Corn
Total time: 15 minutes
Nothing says summer like corn on the cob. We've tried roasting it and boiling it... and if I ever find a method that is better than plain old steaming I'll add it to the recipes....
Ingredients:
- 4 - 6 ears sweet corn, go down to the garden and pick - or to your local farm stand
- Butter
- salt
- pepper
Instructions:
- Shuck corn.
- Bring an inch of water to boil in a large kettle with a steamer rack.
- Add corn, cover and steam 4 - 5 minutes (depends on how much corn you put in) or until done.
- Take 1 ear, slather with butter, salt and pepper. Eat. Repeat. Happy summer!
