Menu Plan for the week of July 26, 2013:  Thursday's Recipes

Teriyaki Burgers
Grilled Spicy Sweet Potatoes
Sautéed Zucchini (Courgette) with Feta and Olives

Cooking time:  35 minutes for menu          Cooking schedule: see below for instructions

     Burgers and Fries - sort of. 

Grilled Teriyaki Burgers

Total time: 25 minutes 
   These could be made with ground turkey or chicken as well.  The addition of the onions, breadcrumbs, ketchup and Teriyaki keeps them moist and flavorful.  I normally make 3 patties and serve 1 1/2 each.

Grilled or Roasted Sweet Potatoes

Total time: 40 minutes
   These get a bit crusty on the outside and incredibly soft and creamy on the inside.  Yes, the skins are edible and good for you ;-))

 Instructions:

Sautéed Zucchini (Courgette) with Feta and Olives

Total time: 20 minutes 
    Use a smaller zucchini (courgette) for this dish, and a yellow or red pepper.  Add the feta and olives at the end so they only start to get warm.

Sautéed Zucchini (Courgette) with Feta and Olives Ingredients:

 Instructions:

Cooking schedule: 35 minutes
Assemble all food, utensils and serving dishes
Utensils: measuring cups, spoons, knives,
scissors, 2 medium - large bowls, medium skillet
(used 2X), barbecue grill, grill pan, basket

Turn on/light barbecue grill
Finely chop celery, onion
Mince garlic
Sauté onion, celery, garlic for burgers
Mix all ingredients for sweet potatoes
Cut potatoes, add to oil mixture, stir to coat
Start to cook potatoes

Remove onion/celery to bowl for burgers
Cut zucchini
Chop pepper
Make burgers, patty, put in basket if using, set aside
Mind the potatoes
Sauté zucchini, peppers
Cook burgers
Turn burgers
Pit olives, crumble feta
Remove burgers, potatoes
Finish zucchini
Serve
