Stir-Fried Broccoli and Rice Time: 15 minutes
1/2 green pepper
1/2 head of broccoli
2 shallots
2 cloves garlic
1 cup brown rice
1 tbs olive oil
2 tsp sesame oil or walnut oil
2 tsp soy sauce
2 tbs sherry
1 tbs teriyaki sauce
1 tbs sesame seeds
Slice pepper and shallots. Mince garlic. Cut broccoli into small florets. Heat oils in nonstick skillet over medium-high heat. Toss in all of the vegetables and stir-fry about 5 minutes. Add soy sauce, sherry and teriyaki sauce, reduce heat to low, cover and simmer another 5 minutes. Uncover, increase heat to medium-high, add rice and stir-fry for 5 minutes longer. Vegetables should be crisp-tender. Sprinkle with sesame seeds and serve.
