Tuna and White Bean Salad                                          Time: 15 minutes

1 can tuna 6 oz (190gr)
1 can (jar) white beans 8 oz (250gr)
1/2 cup diced celery
1/3 cup sliced olives - again, I use green, but use any kind you like
1 tbs fresh chives, snipped
1 tbs fresh oregano, snipped
Vinaigrette:
2 tsp Dijon mustard
1 tsp lemon juice
1 tsp vinegar - white wine tarragon is best
1/3 cup olive oil - the good stuff

Snip herbs.  Combine tuna, beans, celery, herbs and olives in medium bowl.  Combine mustard, lemon juice and vinegar in small bowl and whisk together.  Slowly add olive oil, whisking constantly to emulsify.  Add to tuna and mix gently.  Allow to sit a bit for flavors to blend, 30 minutes or so.  Serve, garnish with a couple of reserved olives.
