Chilled Fresh Tomato Soup                                      Time: 30 minutes plus chilling time

3 tomatoes
1/2 onion
1 small potato, about 1/2 cup
1 cup chicken broth
1 tbs butter
1 tbs fresh snipped chives
2 tbs fresh snipped basil
1/4 - 1/2 cup milk or cream - or more chicken stock
2 tbs plain yogurt

Peel tomatoes.  Roughly chop onion, potato and tomato.  In medium saucepan melt butter over medium-high heat.  Add onions and sauté until tender, about 5 minutes.  Add potato, tomato and chicken stock.  Reduce heat, cover and simmer until all vegetables are tender, about 20 minutes.  Puree soup.  Chill soup for at least an hour. When ready to serve, remove from fridge and check consistency.  If you would like it thinner add milk, cream or chicken stock.  Snip herbs.  Serve soup. Put 1 tbs of plain yogurt in the center of each bowl of soup and run a knife through to make a design.  Sprinkle fresh herbs on top. Serve.
