Ravioli with Browned Butter Time - however long it takes to get the water to boil
and cook the pasta use your choice of commercial pasta
I use tiny, fresh raviolis filled with goat cheese but any ravioli, tortellini, rigatoni or even elbow macaroni works fine.
1 package fresh ravioli (about 8 -10 oz) or 2 cups dried
1/4 cup butter
pepper
Cook pasta according to package directions, drain and put in serving bowl. Return pasta pan to medium heat. Add 1/4 cup of butter to pan and let it fry until it turns brown - being careful not to let it turn too dark or it will taste burnt. When brown remove from heat and add lots of black pepper, a bit of salt and pour over the pasta. Toss lightly and serve.
