Spanish Rice, winter version Time: 30 minutes
1/2 cup brown rice
2 tbs chopped onion
1 clove garlic, minced
1/3 cup tomato juice
2/3 cups ch
icken stock
1 tbs olive oil
Finely chop onion and mince garlic. Heat oil in small saucepan. Add onion and sauté until transparent. Add garlic and rice and sauté 3 minutes. Add chicken stock and tomato juice, cover, reduce heat and simmer until rice is done (package directions) 15 - 20 minutes. Uncover, fluff with a fork and serve.
