Sesame Brown Rice with Mangetout (snow peas, pea pods)    Time:10 minutes

2/3 cup brown rice - I use 'Uncle Ben's' which is all I can get and it is quick cooking.  It looks like
             brown Basmati and cooks in 15 minutes.
1 1/3 cups water or beef stock (or half each) or whatever your rice calls for
mangetout, snow peas - enough for two  6 oz (180gm)
1 tsp butter
2 tsp sesame or walnut oil
1 tbs olive oil
1 tbs soy sauce
pimiento, sliced or diced, 2 oz
2 tsp sesame seeds

Cook rice in chicken stock according to package instructions.  Clean pea pods - snip off the stem end...tough one.  Heat butter and 1 tsp sesame oil in a large nonstick skillet over medium heat.  Add pea pods and soy sauce and sauté 5 - 10 minutes, depending on size, stirring frequently.  Taste, when they are done to your liking, remove and set aside.  When rice is done remove from heat and fluff.  Heat 1 tsp sesame oil and olive oil in skillet (the same one).  Add soy sauce and brown rice,  stir-fry quickly.  Add mangetout, pimiento, stir to combine.  Sprinkle with sesame seeds and serve.
