Thyme for                         Cooking

     We're rearranging things a bit this week in honor of Easter.  We normally have fish on Friday because that's when I do the shopping and I like to use the fish right away.  Because we'll have a big dinner on Easter Sunday I thought I would lighten things up a bit on Saturday.  The Emerald soup will make enough for 4 servings so we'll have that to start before the Lamb as well.  Obviously, you can rearrange the meals to suit your own purposes: lasagne on Friday; lamb on Saturday; whatever.....   Oh, and the Asparagus is here!

Friday:       Quesadillas with Caramelized Onion and Ricotta
Pizza Steaks
Creamy Herbed Polenta

Balsamic Glazed Carrots

Saturday:   Emerald Soup
Salmon Lasagne

Sunday:      Emerald Soup  
Roast Lamb on a bed of Potatoes
Asparagus with Garlic Chips
Strawberries
with Ricotta

Monday:      Salmon Lasagne
Italian Beans with Shallots

Tuesday:      Shepherd's Pie

Wednesday: Baked Chicken with Mustard Crust
Pasta with Peas and Asparagus

Thursday:  Spicy Beef Enchiladas
