Chicken with Tomato/Creme Fraiche Sauce Time: 25 minutes
2 chicken breasts, boneless, skinless
1 can whole tomatoes
1/3 - 1/2 cup creme fraiche or sour cream
1 tsp basil
2 cloves garlic
1 tsp paprika
1 tbs oil
Mince garlic. Drain tomatoes. Roughly chop tomatoes. Heat oil in nonstick skillet. Add paprika and sauté 1 minute. Add chicken and brown lightly on both sides, about 4 minutes per side. Add garlic and sauté 1 minute more. Add tomatoes and basil. Cover, reduce heat and simmer 10 minutes, or until chicken is cooked through. Remove from heat and stir in creme fraiche. Serve.
