Lentil and Meatball Stew with Brown Rice

2 meals in the same week from leftovers is not the norm, but it can be nice on occasion. There are some things, like soups and stews, that are just better when made in larger quantities. The timing on this dinner is solely dependent on the rice!
Lentil and Meatball Stew Time: 30 minutes
If the stew seems dry, which it can as the lentils can absorb more liquid, add a bit of beef stock or tomato sauce. This is equally good served with pasta but, nutritionally, brown rice complements lentils very well, so that is our choice.

1/4 - 1/2 cup beef stock
Put stew in sauce pan, add stock if needed. Gently reheat and serve.
Brown Rice Time: 20 minutes or whatever your package says
I use 'Uncle Ben's' which is all I can get and it is quick cooking. It looks like brown Basmati and cooks in 20 minutes. If you want something faster substitute Basmati.
2/3 cup brown rice
1 1/3 cups water or chicken stock (or half each) or whatever your rice calls for
Cook rice according to package instructions. Fluff and serve.
