Ham and Spinach Pasta

The last bit of ham (maybe - or maybe not) gets used in an easy pasta dish. Toss in some spinach for nutrition, and cheese for creamy flavor and we're done. Dinner in under 30 minutes.
Pasta with Ham and Spinach Time: 25 minutes
This is a flexible dish: if you don't have any ham left you can use: beef, bacon, tuna, chicken, whatever is on hand...or skip the met entirely and add more cheese
1 large onion
2 cloves garlic
1 tbs olive oil
1 pkg frozen spinach, 8 oz (250gr)
2 cups leftover ham, cut into bite-size pieces
1/2 cup white wine
1/2 cup chicken stock less 2 tbs for cornstarch (maizena)
2 tbs cornstarch dissolved in 2 tbs chicken stock
1 tsp basil
1/4 - 1/2 cup (2 - 4oz, 60 - 125ml) crème fraiche if you have some left - or add another 1/3 cup cheese
1/3 cup shredded cheese (3 oz - 90 gr))
1 1/4 cup bite-size pasta, penne, farfalle,
Cook pasta according to package instructions. While waiting for the water to boil, prepare sauce. Thaw spinach and squeeze dry. Chop onions, mince garlic. Cut ham. Heat oil in medium nonstick skillet over medium heat. Add onions and garlic. Sauté for 5 minutes. Add ham and sauté another 5 minutes. Add spinach, white wine, stock and basil. Reduce heat and simmer, uncovered, 10 minutes. Dissolve cornstarch in stock. Stir into sauce until thickened. Add crème fraiche and cheese, stir until melted. When pasta is done, drain and put into a large bowl. Add sauce and toss to coat. Serve. top of page
