Boxing Day (or St. Stephen's Day)

Cooking time: 25 minutes for menu Cooking schedule: see below for "menu" instructions |
The big day is done, the cooking is over, time for a wee break. We have a fridge full of leftovers. And, we've been eating rather a lot lately, so it's time for a break.
Sautéed Ham Time: 10 minutes
The best thing about baking a ham is the leftovers. For this first dish, we'll be simple.
sliced leftover ham
1 tbs olive oil
leftover mustard sauce
Slice enough ham for 2 for dinner. Heat oil in nonstick skillet. Sauté ham until lightly browned and hot. Serve with Mustard Sauce on the side.
Note: We'll be eating the last of the ham on Thursday - if you have a lot left, reserve 2 cups and have sandwiches....
Leftover Gratin Potatoes Time: 20 minutes
If you don't any have any left, do some simple fried potatoes and onions with the ham. No potatoes? How about some pasta with browned butter?
leftover gratin potatoes
Gently reheat - either in the oven or microwave. Serve
Sautéed Leftover Brussels Sprouts and Chestnuts Time: 25 minutes
leftover sprouts and chestnuts from yesterday
1 onion or shallot
1/2 tsp thyme
1 tbs butter
1 tbs olive oil
Peel and thinly slice onion. Slice sprouts (they'll kind of shred) and chestnuts (they may crumble). Heat butter and oil in medium nonstick skillet over medium heat. Add onion and sauté 15 minutes or until lightly browned. Add sprouts, chestnuts and thyme and sauté another 5 - 10 minutes or until heated through and starting to brown. Remove, sprinkle with salt and pepper if desired and serve.
