Pan-Seared Steak with Spicy Browned Onions
Roasted Potatoes
Red Cabbage
Cooking time:  40 minutes for menu
Cooking schedule: see below for "menu" instructions

There are often lovely cuts of beef in the markets on special.  This is an opportunity to pick something out that looks good, will cook fast and still be tender and is somewhat easy on the budget!  I would suggest a London Broil or a Flank steak with out having knowledge of where you shop.  I picked up two pieces of pounded (but not minced) beef wrapped in bacon.  And we'll finish the cabbage!

Pan-Seared Steaks with Golden Onions                                Time: 30 minutes
Depending on the cut of meat you use, you can either serve this whole, on each plate or thinly sliced on the bias and served from a platter (a flank steak or skirt steak is best sliced).  Garnish with onions and sauce.

1 - 2 steaks, 12oz (350gr) total
1 onion
1 tbs brown sugar
1 tbs Worcestershire sauce
1 tbs Balsamic vinegar
1 tbs ketchup
2 tbs red wine, beef stock or water
1 tbs olive oil

Peel and slice onion.  Heat oil in nonstick skillet over medium-low heat.  Add onion and sauté until starting to brown, about 15 minutes.  Remove onions to a plate and cover to keep warm.  Increase heat to medium-high and add steak.  Quickly cook steaks for 2 - 4 minutes per side depending on type and thickness.  When done, remove and cover to keep warm.  Return onions to skillet, reduce heat to medium and add remaining ingredients.  Cook, stirring, until sauce is hot, well combined, and thickened.  Serve steaks, sliced or not, with onions on the side.

Roasted Potatoes                                                                      Time: 40 minutes
Lovely golden brown and crisp, these potatoes are great with any meats any time.  They are easy to make and the herbes can be varied according to the rest of the meal.  The Parmesan is optional.
In summer we do them on the barbecue grill in an old metal pie plate for the same amount of time..

2 medium potatoes
1 tbs olive oil
2 tsp Worcestershire sauce
1 tsp rosemary
salt and pepper
1/4 grated Parmesan (the stuff in the can is okay)

Slice potatoes in half the long way, then in half again.  Then slice in half or thirds the short way.  Put remaining ingredients except Parmesan, into large bowl and mix well.  Add potatoes and toss, coating thoroughly.  Arrange potatoes on baking sheet with rim (I use my trusty, round pizza pan) Bake at 400F for 30 minutes.  You can turn once if you like to fuss but I usually don't bother. Remove from oven and sprinkle with Parmesan.  Return to oven for 5 more minutes.  When done remove from pan and serve.  These will stay hot for awhile so a 5 or 10 minute delay is okay.

Red Cabbage                                                              Time: 10 minutes
This should be the last of it.  If you have any left - eat it for lunch or freeze it!
