Chicken and Barley Soup

Leftover soup and leftover tortillas make for a fast but healthy and warming dinner. I'm assuming that there were 8 tortillas in the package you bought - 4 for yesterday, 2 today and the last 2 will make quesadillas for the first course on Friday.
Chicken and Barley Soup Time: 15 minutes
It's both a problem and a benefit that one cannot make a good, hearty soup in small quantities. If you have any left after today, have it for lunch or freeze it.

Homemade Taco Chips Time: 15 minutes
One of the problems with packaged food is it is so rarely the right amount. But tortillas make excellent taco chips!
2 tortillas
garlic powder, salt, chili powder, oregano
Cut the tortillas into triangles, sprinkle on some salt, garlic powder, paprika, whatever, and bake, 400F (200C) until light brown, 10 - 15 minutes - Voila! Taco Chips! If you want them to have a bit more of a 'fried' taste and crispness you can spray them with cooking oil or brush lightly with olive oil before sprinkling on the seasonings.
