Beef Patties with Caramelized Onions
Baked Acorn Squash, Sweet

Beef Patties with Caramelized  Onions                           Time: 30 minutes

12 oz ground beef (350 gr mince)
1/4 cup breadcrumbs
2 tbs Dijon Mustard
2 tbs red wine
1 tsp garlic powder
1 tsp thyme
1 large or 2 smaller onions
2 tbs butter
1 tbs brown sugar
2 tsp Dijon mustard

Mix breadcrumbs, mustard, red wine and garlic powder.  Add beef and mix thoroughly - hands are best.  Shape into 3 or 4 patties.  Cut onion in half then into 1/4 inch (.65cm) think slices.  Heat butter in large nonstick skillet over medium heat.  Add onions and sauté until browned, stirring frequently, 15 minutes.  Add patties (moving onions out of the way) and sauté 5 - 7 minutes per side.  Remove burgers and keep warm.  Add sugar and mustard to onions and stir until well blended and sugar is melted.  Spoon over burgers and serve.

1 acorn squash
2 tbs butter
2 tbs brown sugar - I think with this meal sweet is best

Cut squash in half - a cleaver works well, they are kind of hard.  Remove seeds with a spoon.  Place cut-side up in a baking dish, cover with foil and bake for 40 minutes at 400F.  Remove from oven.  They should be almost completely cooked - 95%.  Put 1 tbs butter and brown sugar into the hollow of each squash.  Return to oven and bake another 10 minutes, until the flesh is very soft.  Remove and serve on a small plate, eat with a spoon, adding more butter to taste.

Assemble all ingredients and utensils
Turn oven on
Cut squash in half, scoop out seeds
Cover and start to bake

Do pantry inventory
Check fridge and freezer
Check shopping list
Slice onions and start to sauté
Mix crumbs, mustard, wine and garlic

Add beef and mix well
Stir onions
Make patties
Start to sauté patties
Remove squash, add butter and sugar, return
Turn patties
Remove patties and finish onions
Remove squash
Spoon onions over burgers
Serve and enjoy
