Chicken with a Mustard Crust
Leftover Lentils
Brown Rice with Onions
Cooking time:  40 minutes for menu

Baked Chicken Breasts with Mustard Crust                        Time: 40 minutes

2 chicken breasts, boneless, skinless
2 tbs Dijon mustard
2 tbs olive oil
1/2 tsp dried tarragon
1/2 tsp garlic powder
2/3 cup bread crumbs

In small bowl mix mustard, oil, tarragon and garlic.  Spread over both sides of chicken breasts.  Put bread crumbs on a plate and roll to coat completely.  Placed on a baking sheet either nonstick or coated with a bit of oil.  Bake at 400F (200C) for 30 minutes or until topping is light brown and chicken is done (test if not sure - see techniques). Remove and serve.

Southwestern Lentils leftover                                          Time: 15 minutes

Remove from fridge and reheat, either in the microwave or, over low heat on the stove top. 

Brown Rice with Onions                    Time: 25 minutes or whatever your package says

1/2 cup brown rice - I use 'Uncle Ben's' which is all I can get and it is quick cooking.  It looks like
             brown Basmati and cooks in 15 minutes.
1 cup chicken stock or whatever your rice calls for
1 onion
1 tbs olive oil
1 tbs fresh snipped oregano substitute 1 tsp dried

Chop onion.  Heat oil in small saucepan.  Add onion and sauté until tender.  Add rice and sauté another 2 minutes.  Add stock and cook rice according to package instructions.  Add oregano during last 5 minutes of cooking time.  Fluff and serve.  
                                                                                                         

Cooking schedule: 40 minutes
Assemble all food, utensils and serving dishes
Turn oven on
Mix mustard, oil, garlic and tarragon
Spread mustard mix over chicken
Roll in bread crumbs and start to bake
Chop onions
Start to sauté onions

Add rice, sauté
Add stock, cover and cook
Get lentils from fridge
Make the decision - then do it - reheat the lentils
Take a wee break
Practice thumb twiddling...or maybe, sudoku..
Times up. stir lentils, fluff rice, get the chicken
