Barbecued Flank Steak
|
Cooking time: 25 minutes for menu Cooking schedule: see below for "menu" instructions |
With the potatoes and beans left from Saturday this dinner is a snap. Make the marinade for the steak, pop the potatoes into a cold oven, turn it on, then relax for 15 minutes. When you're ready to cook it comes together in less than 10 minutes.
Barbecued Flank Steak Time: 25 minutes
A simple marinade for a simple cut but it imparts lots of complex flavors. To make the most of a flank steak, cook it quickly to medium-rare, than slice it thinly across the grain at an angle ...think of it as a square and slice diagonally from corner to opposite corner.
1 flank steak, 12oz (350gr)
1 clove garlic minced or crushed
1 tbs fresh or 1 tsp dried oregano
1 tbs Dijon mustard
1/4 cup ketchup
1 tbs soy sauce
1 tbs olive oil
Mix all ingredients except flank steak and pour over flank steak coating both sides well. Marinate 15 - 45 minutes. Cook over high heat 3 - 5 minutes per side or broil 5 - 6 minutes a side - or until done as liked. Slice thinly at an angle on the diagonal for the most tender slices. Serve.
Potatoes a la Two Fat Ladies with fresh herbs Time: 20 minutes
Remove potatoes from fridge. Put into a new baking dish if necessary. (The one you have doesn't go from fridge to oven, you stored them in something else, whatever) Put the potatoes into a cold oven, turn the oven on to 350F (180C) and let reheat for 15 - 20 minutes, or until hot.
White and Green Beans with Tomatoes, Shallots and Sage Time: 10 minutes
Remove beans from fridge. Gently reheat in saucepan on low heat until hot.
