Grilled Lemon Chicken
Oriental Pasta Salad

  Another easy dinner with simple grilled chicken and the Pasta Salad that we made on Monday.  This uses the last of my orange marmalade.  Use the substitutions if you are out.

Lemon Chicken Breasts                                                           Time: 30 minutes
   Chicken breasts are a favorite on the grill but be careful not to overcook or they tend to dry out.  We prefer to slice them thinly, at an angle, to serve rather than leaving the breast whole, but that, of course is optional!

2 chicken breasts, boneless, skinless
3 tbs olive oil
2 tbs lemon juice
2 - 3 tbs orange marmalade   substitute 1 tbs honey or 2 tbs brown sugar plus 1 tsp soy sauce
1/2 tsp garlic powder
1 tsp dried tarragon leaves
1/4 tsp ground ginger

In small bowl whisk together oil, juice, marmalade, garlic, tarragon and ginger.  Put chicken in shallow glass baking dish and pour marinade over.  Let marinate 15 - 30 minutes.  Cook on barbecue grill 15 - 20 minutes or on baking sheet in oven (400F) for 25 - 30 minutes or until done. When done (knife poked in and juices run clear) remove from heat, slice and serve.

Oriental Pasta Salad                                                      Time: 5 minutes

Remove from fridge, stir and serve.

Cooking schedule: 30 minutes
Assemble all food, utensils and serving dishes
Make marinade and pour over chicken
Remove salad from fridge, stir
Wee break for 15 minutes
Light/turn on barbecue grill if using

Start to cook chicken
Stand around a bit
Turn chicken
Tidy up the kitchen, set the table, light the candles
Remove chicken, slice
Serve all, enjoy!
