Simple Grilled Burgers Time: 25 minutes
12 oz ground beef (350 gr mince)
2 tbs breadcrumbs
1 1/2 tbs red wine
1 1/2 tbs ketchup
1 tbs Dijon mustard
1 tsp garlic powder
Put all ingredients into a large bowl and mix well. Shape into 4 patties. Oil hinged basket. Place patties in basket and cook on barbecue grill over direct heat for 4 - 5 minutes per side. Or cook directly on barbecue grill. Or sauté in nonstick skillet for same amount of time. Remove and serve.
Quick Pesto Potato Salad Time: 25 minutes
2 - 3 medium potatoes, enough for 2 people
1/3 cup pesto store bought
1/2 carton goat cheese, 1/3 cup (2.6oz, 75gr) half of Chevraux, Chavrie, the little round
cardboard container, 5.3oz (150gr)
Slice potatoes as for salad. Cook in boiling, salted water, partially covered, until done, 15 - 20 minutes. When done, drain, put into serving dish. Mix pesto and goat cheese. Add to potatoes and stir gently to coat. Serve.
Tomato and Cucumber Salad Time: 15 minutes
1/2 cucumber, left from Friday
3/4 cup cherry tomatoes or however many you have left
1/4 - 1/2 red onion, depending on your taste - save the rest for Thursday
1 tbs snipped fresh basil
olives, optional if you have some lurking in the fridge toss in 1/4 cup or so, cut in half...or not
Vinaigrette
Slice the cucumber, as thinly as possible but with skin on and using a knife. Cut cherry tomatoes in half. Slice the red onion as thinly as possible. If you have some olives, cut them in half. Snip the basil. Put everything in a pretty bowl, add the vinaigrette, toss gently and serve.
Vinaigrette
2 tbs balsamic vinegar
4 tbs olive oil, the good stuff
1 tsp dried oregano
Whisk together and immediately pour over salad.
