 Barbecued Pork Chops
Grilled Potatoes and Carrots

Barbecued Pork Chops                                                   Time: 30 minutes

2 - 4 pork chops, 12 - 14 oz (350gr) depending on size, more if bone-in
1 tsp garlic powder
1 tsp chili powder
Barbecue Sauce from Sunday - or your favorite bottled

Mix garlic powder and chili powder and rub on chops.  Cook on barbecue for 5 - 8 minutes a side or until done.  Should be slightly pink near bone when done - take a peak (techniques).  Or fry in nonstick skillet over medium-high heat the same amount of time.  When almost done baste both sides with barbecue sauce and cook another minute on each side.  Serve with any remaining sauce.

Grilled Carrots and Potatoes with Dijon and Thyme      Time: 30-40 minutes

2 - 4 potatoes depending on size - enough for 2
2 - 3 carrots
1 tbs Dijon mustard
2 tbs olive oil
1/2 tsp garlic powder
1 tsp dried thyme   

Cut potatoes in 4ths the long way and then in thirds the short way.  Peel carrots then cut at an angle into long 'rounds', about 1/4" (.6cm) thick.  Put remaining ingredients into medium bowl and mix well - it will get thick.  Add potatoes, carrots and toss well to coat.  Now you have two choices: you can put them in the oven on a baking sheet with lip (trusty round pizza pan) and bake at 400F (200C) for 35 minutes, or put them in an old 'for barbecue only' metal pan and cook over direct heat on the barbecue, stirring frequently until brown and done, 20 - 25 minutes or over indirect heat for 35 - 40 minutes, stirring occasionally.  You know what my choice is - mon mari and the barbecue!  Remove from pan and serve.

Assemble all food, utensils and serving dishes
Turn on/Light barbecue grill or oven
Cut potatoes
Peel and slice carrots
Mix mustard, oil, garlic and thyme
Add potatoes and carrots, toss to coat
Start to cook potatoes and carrots
Mix garlic and paprika
Rub on chops

Start to cook chops
Mind the veg
Turn chops, baste
Turn chops again and baste again
