Grilled Honey Mustard Pork Chops Time: 30 minutes
2 - 4 pork chops, 12 oz total (350gr)
Marinade
1 tbs honey
1 tbs Dijon mustard
1 tbs red wine vinegar
1/2 tsp garlic powder
3 tbs olive oil
Mix all ingredients for marinade and pour over chops. Let marinate for 15 - 20 minutes. Cook on barbecue for 5 - 8 minutes a side or until done. Should be slightly pink near bone when done - take a peak (techniques). Or fry in nonstick skillet over medium-high heat the same amount of time. Serve.
Note: If you cook it too long pork tends to be dry - unless you cook it really, really long - but that's winter cooking ... this is summer.
Brown Rice with herbs Time: 20 minutes or whatever your package says
1/2 cup brown rice - I use 'Uncle Ben's' which is all I can get and it is quick cooking. It looks like
brown Basmati and cooks in 15 minutes.
1 cup water or chicken stock (or half each) or whatever your rice calls for
1 tbs snipped fresh chives
1 tbs snipped fresh basil
1 tbs snipped fresh oregano or whatever else is lurking in the fridge or garden
2 tsp olive oil
Cook rice according to package instructions adding the herbs and oil during the last 5 minutes of cooking time. Fluff and serve.
Barbecued Courgette (Zucchini) Time: 20 minutes
1 medium zucchini, about 10 inches (25cm)
1 tsp Dijon mustard
2 tbs ketchup
2 tsp Worcestershire sauce
2 tbs olive oil
Slice zucchini into 1/2 inch thick rounds. Do not peel first! Brush one side with sauce put, sauce side down, directly onto grill of barbecue. Brush the other side with sauce. Grill just until soft and browned, 10 - 15 minutes, turning once. Mon mari says "they are done when they start to sag in the middle and they have brown grill marks on them". Remove and immediately and serve.
