Barbecued Flank Steak
American Potato Salad, leftover
BBQ Beans, if any left
Lettuce Salad
Cooking time: 25 minutes for menu
Cooking schedule: see below for "menu" instructions

If you are doing the 'alternate Thursday' menu (which uses the rest of the barbecue sauce from Sunday) make this steak according to the recipe below.  If your are NOT making the Pork Chops on Thursday, then substitute the leftover barbecue sauce for the marinade.

Barbecued Flank Steak                                                   Time: 25 minutes

1 flank steak, 12oz  (350gr)
1 clove garlic minced or crushed
1 tsp dried oregano
1 tbs Dijon mustard
1/4 cup ketchup
1 tbs soy sauce
1 tbs olive oil

Mix all ingredients except flank steak and pour over flank steak coating both sides well.  Marinate 15 - 45 minutes.  Cook over high heat 3 - 5 minutes per side or broil 5 - 6 minutes a side - or until done as liked.  Slice thinly at an angle on the diagonal - against the grain for the most tender slices. Serve.

Remove from fridge and serve

BBQ Beans

If you have any left, gently reheat and serve

Lettuce Salad with Pimento Dressing                             Time: 10 minutes

lettuce, enough for two small salads
1/3 cup, or less, Pimento Dressing   left from Friday
1/2 cup cherry tomatoes, halved 

Prepare lettuce and put into a medium bowl.  Add a bit of dressing and toss to coat (use tongs, it's easier).  Taste and add more dressing if desired.  Add cherry tomatoes, give it another toss or two and serve.

Cooking schedule: 25 minutes
Marinate the steak - either make marinade
             or use BBQ sauce
Light/turn on barbecue grill
Assemble all food, utensils and serving dishes
Remove potato salad from fridge
Beans left? Remove, let warm up
Prepare lettuce
Stand around a bit

Plan your 4th
Figure out how to play hooky
Gently reheat beans, if any
Start to cook steak
Slice tomatoes
Turn steak
Make salad
Remove steak, slice
Serve and eat!
