Pork Chops Diablo, summer version
Brown Rice Pilaf
Green Beans with Lemon and Soy Sauce
Cooking time:   30 minutes for menu

Pork Chops Diablo, Grilled,  summer version                     Time: 30 minutes

2 - 4 pork chops - depending on size

Marinade
2 tbs Dijon mustard
2 tbs Worcestershire Sauce
2 tbs olive oil
2 tbs red wine vinegar
1 tsp chili powder
1/2 tsp garlic powder

Mix all ingredients for marinade and brush on chops.  Let marinate for 15 - 20 minutes.  Cook on barbecue for 4 - 7 minutes a side or until done.  Should be slightly pink in center when done - take a peak (techniques).  Or fry in nonstick skillet over medium-high heat the same amount of time.  Serve.

Note:  If you cook it too long pork tends to be dry - unless you cook it really, really long - but that's winter cooking ... this is summer.

Brown Rice Pilaf                                                           Time: 30 minutes

3/4 cup brown rice   brown basmati if you can get it, or a quicker cooking version
1 1/2 cups chicken stock
1/3 cup celery, (1 large stalk) finely chopped  
1/3 cup onion, finely chopped   save rest for Thursday
1/3 cup green pepper, finely chopped save rest for Thursday
1/3 cup mushrooms , finely chopped
1/3 cup carrot, (1 medium) finely chopped
1 1/2 tsp soy sauce

Finely chop all vegetables.  Put all ingredients into a saucepan and cook - according to package directions for brown rice.  Mine takes about 20 minutes.  When done, fluff with a fork and serve. 

Note:  Reserve half of the Rice Pilaf for the Salad on Thursday.  

Green Beans with Lemon and Soy Sauce                       Time: 30 minutes

6 - 8 oz (200gr) green beans
2 tbs fresh snipped chives    Substitute 2 tsp dried
2 tsp butter
2 tsp soy sauce
1 tsp lemon juice

Top and tail and beans.  Cut in 1 1/2inch (4cm) lengths.  Put in a small sauce pan with an inch of water.  Bring to a boil over medium heat.  Turn down to low and simmer until done - about 10 minutes.  Drain beans and put into a serving bowl.  Melt butter in same pan.  Add soy sauce, chives and lemon and stir to combine.  Pour over beans and serve.

Cooking schedule: 30 minutes
Assemble all ingredients and utensils
Turn on/light barbecue grill
Mix ingredients for pork marinade
Brush on pork
Finely chop onion, celery, pepper, mushrooms,
       carrot
Combine all ingredients for pilaf in saucepan, cook Top and tail beans
Stand around for a few minutes

Start to cook beans
Start to cook chops
Turn chops
Remove beans
Melt butter, soy sauce and lemon
Remove chops
Finish beans
Fluff rice
Serve all. Eat
