French Burger with Avocado Sauce

French Hamburgers Time: 20 minutes
12 oz ground beef (350 gr mince)
1 tbs snipped fresh tarragon
1 tbs snipped fresh chives
1 tbs snipped fresh parsley
2 tbs capers
2 tbs breadcrumbs
3 tbs white wine
1 tsp capers
Snip herbs. Chop capers if large, otherwise leave whole. In medium bowl mix herbs, breadcrumbs, capers and wine. Add beef and mix well - hands work best. Shape into 4 patties. Sauté in a nonstick skillet for 4 - 6 minutes a side, depending on how you like them done. OR cook on barbecue grill for the same amount of time - until done to your liking. Use a grill basket or pan. Serve with a large dollop of Avocado Sauce and garnish with remaining capers. (or serve on buns if you like)
Note: If using dried herbs add another 1 tsp white wine
Avocado Sauce
1 ripe avocado
1 tsp lemon juice
3 tbs Greek or plain yogurt (1.5 - 2 oz, 60ml)
1 tsp snipped fresh tarragon
Remove avocado from shell and put into a medium bowl. Add lemon juice and mash with a fork. Then take a whisk and whisk until fluffy. Whisk in yogurt and tarragon. Serve over French Burgers.
Garlic Fries (Chips) Time: 45 minutes
2 - 3 potatoes, depending on size
1 tbs oil
1 tbs butter
4 cloves garlic
2 tbs Parmesan cheese
salt
Cut potatoes into sticks - about 1/3 inch (1cm square), no need to be precise. Toss with oil and arrange on baking sheet. Bake at 400F (200C) for 35 minutes. Mince garlic. 5 minutes before potatoes are done, heat butter in a large nonstick skillet over medium heat. Add garlic and sauté lightly. Remove potatoes from oven and add to garlic along with cheese. Toss, flip, etc. the potatoes to coat. Serve immediately.
