Turkey Piccata

Grilled Turkey Cutlets Piccata Time: 30 minutes
2 - 4 turkey cutlets, depending on size, 12 oz total weight (350gr) or use chicken breasts
2 tbs capers (with liquid)
2 tbs lemon juice - fresh squeezed from 1/2 lemon - add more from bottle if needed
2 tbs olive oil
Put capers, lemon juice and oil in small bowl and whisk to combine - mixture will get very thick. Put turkey in a shallow dish and pour marinade over and let marinate for 20 minutes. Remove from marinade and cook on barbecue grill for 3 - 4 minutes per side depending on thickness - or until done ...you know, not pink; take a peak and see. (Chicken will take to – 12 minutes per side.) Or can be sautéed in nonstick skillet over medium heat for the same time - or until done. Remove from heat and serve - you can sprinkle on some more capers if you like..... I do.
Pasta with Browned Butter Lemon and Capers Time: however long it takes to get
the water to boil and cook the pasta plus 7 minutes.
1 cup or less pasta - rigatoni
2 tbs butter
1 tbs lemon juice
1 tbs capers
1/3 cup Parmesan
Cook pasta according to package directions, drain and put in serving bowl. Return pasta pan to medium heat. Add butter to pan and let it fry until it turns brown - being careful not to let it turn too dark or it will taste burnt. When brown reduce heat and add lemon and capers. Put pasta back into pan and stir to coat and reheat. Serve.
Sautéed Mangetout and Mushrooms (snow peas, pea pods) Time:10 minutes
snow peas - enough for two, 6 - 8 oz (200gr)
2 - 4 oz mushrooms
1 tsp butter
1 tsp olive oil
1 tbs sesame seeds
Salt and pepper
Clean pea pods - snip off the stem end ...tough one. Trim and thickly slice mushrooms. Heat butter and oil in nonstick skillet over medium heat. Add pea pods, mushrooms and sauté 5 - 10 minutes, depending on size, stirring frequently. Taste, when they are done to your liking, remove, add salt, pepper, sprinkle with sesame seeds and serve.
