Stuffed Burger

Stuffed Burger Time: 45 - 60 minutes depending on whether you are
using barbecue or oven
1 lb ground beef (mince)
1 large onion
1 tbs olive oil
1/4 cup bread crumbs (I use seasoned with parsley & garlic)
2 tbs ketchup
2 tbs red wine or beef stock
1/4 tsp garlic powder
1/2 cup shredded cheese
Thinly slice onion and sauté in olive oil in nonstick skillet over medium-high until golden. Divide beef in half. On plates or waxed paper pat each half into a thin patty, 6 - 8 inches in diameter. Mix bread crumbs, ketchup, wine and garlic powder and spread over 1 patty to within 1/2 inch of edge. Spread fried onions on top of bread crumbs mixture and cheese on top of onions. Carefully put second patty on top and work the edges together with your fingers to seal. If using the barbecue put into a wire grill-basket or onto a mesh grill pan. Grill for 10 - 12 minutes over medium-high heat, carefully turn and grill another 8 - 10 or until done. If using oven put on the trusty round pizza pan and bake at 400F for 35 - 40 minutes or until done. Hint: when cheese starts oozing out the edge I consider it done. Remove to platter, cut into wedges and serve. Leftovers make great sandwiches
Baked Garlicky Potato Chips Time: 50 minutes
2 large potatoes (not huge)
2 tbs olive oil
1 tsp white balsamic vinegar
1/2 tsp garlic powder
1 tsp paprika
salt - sea salt is good
Slice potatoes into 1/4" (.6cm) slices. Put olive oil, vinegar, garlic and paprika into a medium bowl and mix well. Add potato slices and toss to coat. Lay slices on a non-stick baking sheet (if you have one - just makes it easier). Put in a 400F (200C) oven and bake for 35 minutes. Remove pan, turn potato slices and return to oven for 10 more minutes. When done, remove from pan, sprinkle with salt and serve. These should be a lovely golden brown and very crunchy.
Roasted/Baked Asparagus Time: 20 minutes for green, 30 for white
longer if they are huge!
8 oz (250gr) asparagus
olive oil
salt - sea salt
good olive oil for finishing
Snap off ends of asparagus. If white use vegetable peeler and peel bottom half of stalk. Put a drizzle of oil on a plate. Roll the asparagus in oil (use your fingers!) Sprinkle with a little salt (sea salt is nice) and lay on baking sheet. Put in the oven at 400F (200C), tips facing the oven door. Bake for 15 - 25 minutes. When cooked, put on serving dish and drizzle with a bit more good olive oil and some pepper.
Note: In this meal we're going to put them on the same sheet as the potatoes. saves clean-up
