Thyme for                         Cooking

Barbecued Turkey Tenderloin
Roasted Potatoes
Green Beans with Butter and Chives
Cooking time:   40 minutes for menu
Cooking schedule: see below for "menu" instructions

Turkey Tenderloin                                                 Time: 30 to marinate, 30 to cook

1 turkey tenderloin 12 oz (350gr)  if you can't get a small tenderloin use the rest in a salad or sandwich for lunch
Marinade
1/2 cup ketchup
1/4 cup dry sherry
2 tbs Worcestershire sauce
2 tbs honey
2 tbs olive oil
1 tbs lemon juice
1 tbs chopped fresh sage or 1 tsp dried

In small bowl mix ingredients for marinade.  Divide in half and pour half over turkey.  Set aside to marinate for 30 minutes or all day if you like - refrigerate if longer than 30 minutes.  Heat remaining sauce and keep warm.  Cook turkey on barbecue grill for 25 - 30 minutes or until done (meat thermometer comes in handy...)  When done, remove, slice and serve with warmed sauce.

Note:   To roast in the oven bake at 375F for 30 - 35 minutes - check after 30, as usual, all times depend on thickness of turkey.

Roasted Potatoes                                                                      Time: 40 minutes

2 medium potatoes or 4 small (or however many you think you would like)
2 tbs olive oil
2 tsp Worcestershire sauce
1 tsp thyme (I make these lots and very the herbs according to the rest of the meal)
salt and pepper
1/4 grated Parmesan (the stuff in the can is okay)

Slice potatoes in half the long way, then in half again.  Then slice in half or thirds the short way.  Put remaining ingredients except Parmesan, into large bowl and mix well.  Add potatoes and toss, coating thoroughly.  Arrange potatoes on baking sheet with rim (I use my trusty, round pizza pan) Bake at 400F for 30 minutes.  You can turn once if you like to fuss but I usually don't bother. Remove from oven and sprinkle with Parmesan.  Return to oven for 5 more minutes.  When done remove from pan and serve.  These will stay hot for awhile so a 5 or 10 minute delay is okay.  These can also be done on the barbecue in an old metal pie plate, cake tin or whatever, that you will never use for any purpose but the barbecue again...and you should have one of these.  Barbecue grill cooking takes about 30 minutes also.

Green Beans with Butter and Chives                             Time: 30 minutes

5oz (150gr) green beans
1/4 cup chicken stock
1 tbs butter
1 tbs freshly snipped chives

Top and tail beans...cut off the ends.  Cut into 1 1/2 inch lengths (4cm).  Put beans into small skillet, add stock, cover and simmer over medium heat until done - about 20 minutes.  If beans dry out add a little water.  When done drain and transfer to a serving bowl.  Melt butter in the same skillet over low heat.  Snip chives using scissors.  Add to melted butter and sauté briefly.  Add beans and toss/stir to coat with butter and chives.  Serve.
