Beef Patties with Caramelized Onions
Oven Baked Potato Chips

   If you have any other bits of veg in the fridge you can roast them with the potatoes.  With all of the onions, mushrooms and peppers, I'm not making a separate vegetable with this meal. 

Beef Patties with Caramelized Onions                           Time: 35 minutes
    We use 8oz and make 2 nice burgers.  If you want more meat just increase everything else (not the caramelized onions) proportionately.  It's a pretty flexible recipe.  I added the rest of the mushrooms and pepper to this to clean out the fridge and round out the meal.

8 - 10 oz ground beef (300 gr mince)
2 tbs breadcrumbs
1 tbs Dijon-style mustard
1 tbs red wine   (or beef stock or ketchup)
1/2 tsp garlic powder
1 tsp thyme
1 large or 2 smaller onions
1/2 green pepper   left from Wednesday
2 - 3 oz mushrooms   left from the week
2 tbs butter
1 tbs brown sugar
2 tsp Dijon-style mustard

Mix breadcrumbs, mustard, red wine, garlic powder and thyme.  Add beef and mix thoroughly - hands are best.  Shape into 2 or 3 patties.  Cut onion in half then into 1/4 inch (.65cm) think slices.  Heat butter in large nonstick skillet over medium heat.  Add onions, cover and cook for 5 minutes.  Clean and thickly slice mushrooms.  Cut pepper into matchsticks.  Uncover  onions, add mushrooms, peppers, and sauté until browned, stirring frequently, another 15 minutes.  Add patties (moving vegetables out of the way but leave in pan) and sauté 5 - 7 minutes per side.  Remove burgers and keep warm.  Add sugar and mustard to vegetables and stir until well blended and sugar is melted.  Spoon over burgers and serve.

Baked Potato Chips                                                      Time: 50 minutes
   Just a light coating of olive oil keeps these potatoes on the healthy side.  They are a lovely golden brown and crunchy.  Sprinkle with a bit of sea salt for the perfect finish.

2 large potatoes (not huge)
2 tbs olive oil
salt - sea salt is good

Slice potatoes the long way into 3/16 inch (.5cm) thick slices.  You should get 5 - 7 slices from each potato - discard 'end's.  Put olive oil on a small plate.  Dip both sides of potato slices in oil and lay on a non-stick baking sheet (if you have one - just makes it easier).  Put in a 400F (200C) oven and bake for 40 minutes.  After 30 minutes, remove pan, turn potato slices and return to oven for 10 more minutes.  When done, remove from pan, sprinkle with salt and serve

Cooking schedule: Time: 50 minutes for menu
Assemble all food, utensils and serving dishes
Turn oven on
Slice potatoes
Dip in oil, put on baking sheet, bake
Slice onions and start to cook
Mix all ingredients for burgers except beef
Add beef, mix well, form patties
Clean and slice mushrooms
Cut pepper
Uncover onions, stir, let brown

Add pepper and mushrooms to onions
Start to cook burgers

Turn burgers
Turn potatoes
Check fridge and freezer 
Check shopping list
Add sugar, mustard to onions, stir
Finish everything
