Mini Meat Loaf Parmesan
Spaghetti with Garlic and Parmesan
Cauliflower Dijon
Cooking time:   30 minutes for menu

Mini Meat Loaf Parmesan                                             Time: 30 minutes

2 mini meat loaves,  leftover from yesterday
1 can whole tomatoes  15 oz (450gr)
1 onion
2 cloves garlic
1 tbs olive oil
1 tsp chili powder
1 tsp oregano
1 tsp basil
1 tbs Balsamic vinegar
2 tbs tomato paste
1/4 cup shredded cheese
1/4 cup Parmesan cheese

Chop onion and mince garlic.   Heat oil in medium nonstick skillet.  Add chili powder and sauté 1 minute.  Add onions and garlic and sauté 5 minutes.  Drain tomatoes, reserving juices.  Roughly chop tomatoes.  Add tomatoes, their reserved juices, herbs, vinegar and tomato paste to pan.  Stir well, reduce heat, cover and simmer.  Cut Meat Loaves into thick slices.  After sauce has simmered for 15 minutes lay slices of meat loaf in the sauce.  Cover and simmer another 10 minutes, until meat has heated through.  Sprinkle cheeses on each slice and cover until cheese has melted.  Serve, sauce on the side.

Spaghetti with Garlic and Parmesan                    Time: 5 minutes plus however
                                                                                                             long it takes to cook the pasta

2 oz spaghetti or about - see measuring pasta  for spaghetti,  about 3/4" (2cm) circle
1 tbs olive oil
2 garlic cloves, minced
1/3 cup grated Parmesan - preferably freshly grated
black pepper

Cook pasta according to package instructions.  Drain.  In same pan over medium low heat olive oil.  Add minced garlic and sauté for a few minutes.  Add drained pasta, toss quickly, remove from heat and add Parmesan.  Serve.

Cauliflower Dijon                                                          Time: 30 minutes

1/3 head cauliflower- enough for 2 persons
1 tbs olive oil
1 clove garlic
1 tsp dried basil
1 tbs whole grain mustard
1 tbs bread crumbs

Cut cauliflower into pieces, put into a steamer and steam over water for 15 - 20 minutes until fork-tender.  Remove and drain water from pan.  In same pan heat oil.  Mince garlic.  Add garlic and basil, sauté lightly.  Add mustard and heat through.  Add breadcrumbs and stir well.  Add cauliflower and toss to distribute crumb mixture.  Serve.                                                                                                                           top of page

Cooking schedule: 30 minutes
Assemble all ingredients and utensils
Put water on high heat for pasta
Chop onion, mince all garlic
Sauté chili powder for sauce
Add onion and garlic, sauté
Cut cauliflower and start to steam
Roughly chop tomatoes and add to pan
Add other sauce ingredients to pan, cover simmer
Slice meat loaves
Wee break - kitchen clean-up

Start to cook pasta
Add meat loaf slices to sauce
Remove cauliflower
Sauté garlic for cauliflower
Add Dijon, crumbs, sauté
Add cauliflower, toss, keep warm
Drain pasta
Sauté garlic for pasta
Sprinkle cheeses on meat loaf, cover
Finish pasta
