Mini Meat Loaves Time: 45 minutes
This will be enough for two meals
1 lb (450 gr) ground beef (mince)
1 egg
2/3 cup bread crumbs
1/2 cup milk
1/4 cup ketchup
1 tbs Worcestershire sauce
1 tbs Dijon mustard
1 tsp dried oregano
1 tsp dried basil
1/2 tsp garlic powder
1 can tomato sauce, 15 oz (jar 400 gr)
In large bowl lightly beat egg. Add all of the rest of the ingredients except beef and tomato sauce and mix well. Add beef and mix well - best to use your hand, kneading it like bread dough. Shape into 4 loaves and put into a large 9 X 13 baking pan, spacing evenly. Bake at 400F (200C) for 20 minutes. Remove and pour tomato sauce evenly over all 4 loaves. Bake 15 minutes longer or until done. Remove - serve 2 and save 2 for tomorrow.
Brown Rice with Onions Time: 25 minutes or whatever your package says
1/2 cup brown rice - I use 'Uncle Ben's' which is all I can get and it is quick cooking. It looks like
brown Basmati and cooks in 15 minutes.
1 cup chicken stock or whatever your rice calls for
1 onion
1 tbs olive oil
1 tbs fresh snipped oregano
Chop onion. Heat oil in small saucepan. Add onion and sauté until tender. Add rice and sauté another 2 minutes. Add stock, oregano and cook rice according to package instructions. When done, fluff and serve.
Lentils, leftover Time: 10 minutes

Remove from fridge and gently reheat. Serve.
