Parmesan Meat Loaf

Even if we're using leftovers we can be a little creative. Add some pasta and a vegetable and we have a quick, mid-week dinner.
Mini Meat Loaf Parmesan Time: 30 minutes
By slicing the meat loaf, it will reheat quickly in the sauce. The sauce, in turn, goes on the pasta...
2 mini meat loaves, (made earlier)
1 can whole tomatoes 15 oz (450gr)
1/2 onion (save the rest for tomorrow)
2 cloves garlic
1 tbs olive oil
1 tsp chili powder
1 tsp oregano
1 tsp basil
1 tbs Balsamic vinegar
2 tbs tomato paste
1/4 cup shredded cheese
1/4 cup Parmesan cheese
Chop onion and mince garlic. Heat oil in medium nonstick skillet. Add chili powder and sauté 1 minute. Add onions and garlic and sauté 5 minutes. Drain tomatoes, reserving juices. Roughly chop tomatoes. Add tomatoes, their reserved juices, herbs, vinegar and tomato paste to pan. Stir well, reduce heat, cover and simmer. Cut Meat Loaves into thick slices. After sauce has simmered for 15 minutes lay slices of meat loaf in the sauce. Cover and simmer another 10 minutes, until meat has heated through. Sprinkle cheeses on each slice and cover until cheese has melted. Serve, sauce on the side.
Spaghetti with Garlic and Parmesan Time: 5 minutes plus pasta cooking time
This is a simple dish, great eaten alone and even better with a bit of the tomato sauce
2 oz spaghetti or, see for spaghetti, about 3/4" (2cm) circle
1 tbs olive oil
2 garlic cloves, minced
1/3 cup grated Parmesan - preferably freshly grated
black pepper
Cook pasta according to package instructions. Drain. In same pan over medium low heat olive oil. Add minced garlic and sauté for a few minutes. Add drained pasta, toss quickly, remove from heat and add Parmesan. Serve.
Cauliflower with Browned Butter & Pepper Time 25 minutes
Browned butter adds a wonderful, nutty taste to vegetables. But, keeping in mind my desire for healthy foods, I use half olive oil... Feel free to use all butter.
cauliflower, 1/3 head, enough for 2 (We'll use the rest of the cauliflower next Saturday)
1 tbs butter
1 tbs olive oil
salt
lots of pepper (a seasoned pepper is nice)
Cut cauliflower into pieces, put in steamer and steam over water for 15 - 20 minutes until fork-tender. Remove from pan and empty water. Put butter into same pan and sauté until it turns light brown, being careful not to let it get too dark. Then add olive oil and pepper. Heat through and add cauliflower. Toss to coat and serve.
