Mini Meat Loaves
Potatoes Savoyarde, leftover
Cauliflower with Paprika Sauce
Cooking time: 30 minutes for menu
Cooking schedule: see below for "menu" instructions

    We'll be making 4 mini meat loaves, eating 2 tonight and 2 on Wednesday.  Making smaller loaves cuts the baking time in half.  Heat the leftover potatoes and make a veg and you're done!

Mini Meat Loaves                                                                       Time: 45 minutes
     We love meat loaf and often make one just to have for sandwiches.  Making 4 small ones let's me get dinner on the table a bit quicker - perfect for midweek. Plus I have dinner made for another night!

1 lb (450 gr) ground beef (mince)
1 egg
2/3 cup bread crumbs
1/2 cup (4oz, 125ml) milk
1/4 cup (2oz, 60ml) ketchup
1 tbs Worcestershire sauce
1 tbs Dijon-style mustard
1 tsp dried oregano
1 tsp dried basil
1/2 tsp garlic powder
15 oz (450 gr) tomato sauce,   (plus any left from Friday)

In large bowl lightly beat egg.  Add all of the rest of the ingredients except beef and tomato sauce and mix well.  Add beef and mix well - best to use your hand, kneading it like bread dough.  Shape into 4 loaves and put into a large 9 X 13 baking pan, spacing evenly.  Bake at 400F (200C) for 20 minutes.  Remove and pour tomato sauce evenly over all 4 loaves.  Bake 15 minutes longer or until done.  Remove - serve 2; refrigerate 2  

Potatoes Savoyarde                                                                    Time: 15 minutes

Remove from fridge and reheat: 15 minutes in the oven or 5 in the microwave

Note:  If the dish the potatoes are in can't safely go from cold fridge to hot oven, put into a different baking dish.

Cauliflower with Paprika                                              Time: 25 minutes
    A bit of smoky paprika makes an interesting finish for cauliflower.

1/3 head cauliflower, enough for 2 people
1 tbs olive oil
2 tbs chicken stock
1 tsp dried chives
2 tsp paprika  (sweet, smoky or hot - or both)

Cut cauliflower into pieces, put in steamer and steam over water for 15 - 20 minutes until fork-tender.  Remove from pan and empty water.  Put oil into same pan.  Add paprika and chives and sauté 1 minute.  Add stock and heat through.  Pour over cauliflower.  Toss to coat and serve.                                                                                                            top of page

Cooking schedule: 45 minutes
Assemble all food, utensils and serving dishes
Turn oven on; Remove potatoes from fridge
Mix all ingredients for meat loaf -
                except beef and tomato sauce
Add beef, mix well
Shape into loaves, put in pan and start to bake
Wee break, 5 minutes - tidy up the kitchen
Cut cauliflower and start to steam

Start to reheat potatoes
Pour sauce over meat loaves
Another wee break while everything finishes
Remove cauliflower
Make paprika sauce
Pour sauce over cauliflower
Remove potatoes and meat loaves
Serve all and eat!
Don't forget to refrigerate remaining 2 meat loaves
