Baked Chicken with Mustard Crust

Cauliflower with Parmesan Sauce

Baked Chicken Breasts with Mustard Crust                        Time: 35 minutes

2 chicken breasts, boneless, skinless
2 tbs Dijon mustard
2 tbs olive oil
1/2 tsp dried tarragon
1/2 tsp garlic powder
1/3 cup bread crumbs

In small bowl mix mustard, 1 tbs oil, tarragon and garlic.  Spread over both sides of chicken breasts.  Put bread crumbs on a plate and roll to coat completely.  Put remaining tbs oil on baking sheet and spread to fit under chicken.  Place chicken on the oiled baking sheet. Bake at 400F (200C) for 25 - 30 minutes, turning once after 15 minutes, until topping is light brown and chicken is done (test if not sure - see techniques). Remove and serve.

Oven Fries, Spicy                                                          Time: 40 minutes

2 large potatoes or 4 small (or however many you think you would like)
2 tbs olive oil
1 tsp chili powder
2 tsp Worcestershire Sauce

Slice potatoes the long way - a large potato into 8 wedges and small ones into 6.  Put remaining ingredients into large bowl and mix well.  Add potatoes and toss, coating thoroughly.  Arrange potatoes on baking sheet with rim (I use my trusty, round pizza pan)  Bake at 400F for 30 minutes. You can turn once if you like to fuss but I usually don't bother.  When done remove from pan and sprinkle lightly with salt & pepper and serve.  These will stay hot for awhile so a 5 or 10 minute delay is okay.

Cauliflower with Parmesan Sauce                                           Time: 25 minutes

Cauliflower - 1/3 head, enough for 2 people. 
1/4 cup chicken stock
1/4 cup plain yogurt or crème fraiche
1 tsp Dijon mustard
1/4 cup grated Parmesan
pepper - seasoned pepper is nice

Cut cauliflower into pieces, put into a steamer basket and steam over water for 10 - 15 minutes until fork-tender.  Remove from pan and empty water.  Heat stock in the same pan.  When hot add mustard, Parmesan and yogurt. Stir well as it heats but do not let it boil.  Spoon over cauliflower and serve.

Cooking Schedule: 35 minutes
Assemble all ingredients and utensils
Turn oven on
Mix chili powder, Worcestershire and oil
Cut potatoes, add to oil mixture, toss well to coat
Start to bake potatoes
Oil another baking sheet
Mix mustard, oil, tarragon and garlic
Brush on chicken
Coat chicken in breadcrumbs
Start to bake chicken

Cut cauliflower and start to steam
Wee break - kitchen clean-up?
Turn chicken
Fuss with the potatoes if you feel like it
Remove cauliflower, keep warm
Heat stock
Add Parmesan, mustard and yogurt
Stir and heat through
Remove chicken and potatoes
Pour sauce over cauliflower
