Composed Salad
Grilled Salmon/Tarragon Mayo
Pasta with Fresh Pea Sauce
Cooking time: 35 minutes for menu

Composed Salad                                                      Time: 10 minutes (plus eggs)

lettuce, enough for 2 small salads
asparagus, 6 - 8 spears
2 eggs, hard boiled
1 tomato
1/2 green pepper (rest on Thursday)
1/3 cup shredded cheese
Creamy Yogurt Dressing

Cook eggs (see techniques for hints).  Snap off bottom ends of asparagus.  If using white asparagus peel half way to tip.   Put a couple of inches of water into pan large enough to hold the asparagus (I use a 10" (25 cm) skillet).  Bring to a boil and add the asparagus and blanch, 3 minutes for green, 5 minutes for white or until tender when pierced with a sharp knife.  It will depend on how thick the stems are.  Drain and rinse with cold water.  Clean pepper, put half in the fridge for Thursday.  Cut remaining half in matchsticks.   Slice or quarter eggs.  Slice tomato.  Arrange lettuce on plate.  Artfully arrange asparagus, egg, tomato and pepper.  Sprinkle with cheese.  Drizzle with 2 tbs of dressing and serve. 

Creamy Yogurt Dressing 

1 tbs Dijon mustard
1 tbs lemon juice
1 tbs tarragon white wine vinegar
2/3 cup plain yogurt - I use Greek yogurt
3 tbs olive oil - the good stuff
Any fresh herbs you have on hand, I am using
      1 tbs snipped fresh tarragon  (It's easier to snip with a scissors than chop with a knife)
      1 tbs snipped fresh chives

In a small bowl whisk mustard, lemon and vinegar.  Add yogurt and olive oil and whisk until incorporated - this will get very thick.  Add tarragon and chives and stir well to combine.  This will make enough for tonight's salad and a dipping sauce for tomorrow's artichokes

Grilled Salmon with Tarragon Mayonnaise                     Time: 20 minutes

2 salmon fillets - 6 - 8 oz each - or steaks,, if your prefer
1 tbs olive oil
2 tbs snipped fresh tarragon
1 tbs lemon juice
1 tbs snipped fresh chives
1 clove minced garlic or 1/2 tsp garlic powder
1/2 cup prepared mayonnaise                                                            top of page

Mix all of the above 1 tbs tarragon, lemon, chives, garlic and mayo and set aside.  Brush salmon with the oil and sprinkle with remaining 1 tbs fresh tarragon.  Cook over barbecue grill 5 - 10 minutes depending on high heat of grill (gas will normally be about 10 min) or bake in 400 degree oven for 10 - 15 minutes depending on thickness.   Steaks will take a few minutes longer than fillets.  Salmon should flake easily with fork when done but it's okay to have it still a bit pink in the center.  Transfer to a plate, add tarragon mayonnaise on the side.

Pasta with Fresh Pea Sauce       Time: however long it takes to get the water to boil and
                                                                           cook the pasta

1 package fresh farfalle (about 8 -10 oz) or 1 1/2 cups dried
1 - 1 1/2 cups fresh or frozen peas (no sauce - just naked peas) about 8 oz (220 gr)
1/3 cup chicken stock
snipped fresh basil or chives

Cook pasta according to package directions, drain and put into a serving bowl.  Bring stock to boil and add peas.  Cook for length of time on package.  Puree peas in blender with enough stock to make thick sauce.  If too thick add a bit of milk to thin.  Pour over pasta, sprinkle with basil and/or chives and serve.

Cooking schedule: 35 minutes
Put water on high heat for pasta
Cook eggs
Put water on for asparagus
Light barbecue grill
Snip herbs, chop garlic
Turn off eggs
Make creamy dressing
Make tarragon mayo
Blanch asparagus
Fuss with lettuce if needed
Rinse asparagus in cold water
Start to cook peas

Put oil and herbs on salmon
Arrange lettuce, etc.
Peel eggs, slice tomato, finish salad
Turn peas off
Put pasta in if using dried
Put salmon in oven if not using grill
Serve salad, relax and enjoy
Put salmon on grill
Put pasta in if using fresh
Turn salmon
Make pea sauce and finish pasta
