Lemon Chicken

Lemon Chicken Breasts Time - 30 minutes
2 chicken breasts, boneless, skinless
1/4 cup olive oil
1/4 cup lemon juice
1/4 cup orange marmalade
1 tsp garlic powder
1 tsp dried tarragon leaves
1 tbs minced fresh ginger or 1/2 tsp powdered
In small bowl whisk together oil, juice, marmalade, garlic, tarragon and ginger. Put chicken in shallow glass baking dish and pour marinade over. Let marinate 15 - 30 minutes. Cook on barbecue grill 15 - 20 minutes or on baking sheet in oven (400F) for 25 - 30 minutes or until done. When done (knife poked in and juices run clear) remove from heat and serve.
Potato and Bean Packets Time: 35 minutes
2 medium potatoes
1/2 lb green beans
1 small onion
1 tomato
2 tbs chicken stock or water
1 tsp basil
Tear off 2 pieces of heavy duty aluminum foil about 15 inches long and put each on a plate. Cut the vegetables into pieces about 1/2 inch by 1 1/2 inch - or whatever, and divide evenly between the 2 plates keeping in center of foil. Kind of pat the foil down so it takes the shape of the plate - otherwise the chicken stock or water runs everywhere. Divide chicken stock between the 2 plates. Sprinkle with basil. Bring long ends of foil to middle and fold down. Fold in ends so you have 2 nice packets with the veg and broth. Put on barbecue - indirect heat (not over the coals), cover and cook for 30 minutes. Or put in 400F oven for 40 minutes. Check to make certain everything is done. Remove vegetables from packets and serve.
